Easy Hamburger and Potatoes with Cajun Seasoning

Long ago when I was in my early 20s, I remember going over to one of my friends homes for dinner and she served a tomato-hamburger-potato dish.  It didn’t have any seasoning in it except maybe salt and pepper, but it was actually very good, and at that time, I was amazed at her gourmet cooking skills.  I made it a couple of times back then, and then forgot about it.  Then a couple of days ago, I saw a discussion of cajun seasoning on the internet, and somehow I suddenly remembered my friend’s dish.  I love cajun seasoning, and thought that it would be perfect to liven up this recipe.

I found lots of different recipes for cajun seasoning on the internet, and so I just used every ingredient that was mentioned in all of them and it turned out great!  I made this recipe and it was really easy – except for peeling the potatoes – lol – and Al loved it!!

Easy Hamburger and Potato with Cajun Seasoning

Easy Hamburger and Potato with Cajun Seasoning

1 onion, chopped
5 lbs potatoes, peeled and diced
1 lb reduced fat hamburger
1 (28 oz) can diced tomatoes
2 t cajun seasoning

Cook onion and hamburger in a large skillet or wok until onions become translucent and start to turn brown on the edges, and hamburger is cooked.  Add tomatoes, potatoes, and cajun seasoning, and stir to mix.  Bring to a boil, turn down heat to simmer, cover and cook for 1/2 hour stirring occasionally, or until potatoes are soft.

Cajun Seasoning:
2 t salt
2 t garlic powder
1 T paprika
1 T chili powder
1 t black pepper
1 t onion powder
1 t cayenne
2 t oregano
2 t thyme
2 t basil
1/2 t crushed red chilies

Mix all ingredients together thoroughly in a small bowl. Store extra in a small airtight container.
