Spicy Peanut Chicken Satay Roll-Ups

I saw this recipe in the newspaper and since Al and I love chicken satay, I thought that I would try it.  It is nice and spicy, and the recipe makes a lot of sauce, I used about half of it to marinate the chicken, and saved the rest to make this again.  It’s easy to make, and Al loved it since it had so much meat in it – LOL!

Chicken Satay Rollups

1 lb boneless, skinless chicken breasts, cut into small cubes
6 tomatoes, diced
2 ripe avocados, sliced
12 burrito sized flour tortillas

1/2 C peanut powder
1/2 C brown sugar
1/2 C cider vinegar
1/2 C fish sauce
1/4 C garlic-chili paste
1/4 C tomato paste
2 T grated fresh ginger

Mix together sauce ingredients in a bowl, add chicken and toss to cover.  Cover bowl and refrigerate for at least an hour, and up to overnight.  Cook chicken and sauce in a large frying pan or wok until chicken is cooked and the sauce is reduced.  To serve, warm tortillas in a microwave for 15 seconds, spoon on chicken, top with tomatoes and avocados, roll up and enjoy!
