Cupcakes for Two

Al loves cake a lot, actually I really do, too! But most cakes are large with many servings that we eat, and have a lot of sugar and fat and calories in them, and – usually – NO fruit or vegetables! – so I don’t make cake very often.  Then I saw a recipe for cupcakes for two and I thought that it would be perfect.  I had to modify it a lot since it was half frosting and it used a lot of butter for both.  Poor Al, even when I make him cake, it has to be heathy!



This actually tasted really good, and was pleanty of cake for us to subdue our cake craving.

1/2 C flour
3 T sugar
2 T mini chocolate chips
1/2 t baking powder
1/2 t soda
1/4 t salt
1 egg
1/4 C buttermilk
1 t vanilla

1/2 C powdered sugar
1 t vanilla
1 – 2 t non-fat milk

Spray cupcake forms lightly with a non-stick cooking spray.  Measure dry ingredients including chocolate chips into a bowl and mix together.  Break egg into a measuring cup and beat with a fork.  Add buttermilk and vanilla and mix together.  Pour into bowl and mix together thoroughly.  Scrape into cupcake forms and bake at 350 degrees for 20 minutes.  Mix powdered sugar, vanilla, and milk together and drizzle over the top.

I try to use as many fruits and vegetables in my menus as I can cram in, sometimes to the complaints of the hubs - LOL! I am also making over some of my old favorites to be heathier with more vegetables in them, and less fat.
