Roasted Cauliflower with Yogurt Marinade

I really like roasted vegetables a lot, they taste great and it is really easy to do.  I saw this recipe for roasted cauliflower with a yogurt marinade, and immediately wanted to try it.  I just used garlic salt and pepper in the marinade, but next time I think I will try some Italian spices or maybe some crushed red chilies.  The cauliflower was cooked perfectly, and the yogurt/lemon flavor was wonderful!

Roasted Cauliflower

Roasted Cauliflower

1 head cauliflower
1 (8 oz) carton non-fat plain greek yogurt
juice and zest from 1 lemon
garlic salt and pepper to taste

Preheat oven to 425 degrees, break cauliflower head into flowerets that are roughly the same size – for even cooking.  In a large bowl mix together yogurt, lemon juice and zest, salt, and pepper.  Add cauliflower and stir until it is evenly covered.  Line a cookie sheet with aluminum foil, lightly coat with a non-stick cooking spray, and arrange cauliflower on it, scooping up remaining marinade and dribbling it over the cauliflower.  Roast for 30 minutes, eat while hot.
