Winter Fruit Salad with Purple Foam Sauce

This is one of my favorite fruit salads for winter, and Al likes it, too!  Double win!  I usually make the sauce first, and then cut up the fruit while it cools.  The sauce is absolutely fabulous, it foams up from the marshmallows, and the blueberries turn it purple.  I use a whole bag of blueberries because I love them so much, but just a cup would work.  This makes a lot, but we eat it up pretty quickly.  It’s supposed to be chilled before it’s eaten, but we can’t wait, and we always have a bowl each just as soon as it’s finished!

Winter Fruit Salad with Purple Foam Sauce

2 Apples, cored and cut into bite-size pieces
2 Pears. cored and cut into bite-sized pieces
2 C seedless grapes
4 bananas, sliced
2 (20 oz) cans Pineapple Chunks in Juice, drained with juice reserved
Any other fruit that you want

2 T flour
1/4 C sugar
2 C juice from pineapple (add water or juice to make 2 C)
12 regular marshmallows
1 bag frozen blueberries

Mix flour and sugar together in a sauce pan, add juice and mix together throughly.  Bring to a boil, stirring constantly.  Turn off heat, add marshmallows, and stir occasionally until melted, add blueberries.  Cool and pour over fruit.  Keeps in the refrigerator for several days.
