Cooking Red Beans Without Soaking First

I have been cooking beans without soaking them first ever since I read in my local newspaper that you could do this.  I have successfully cooked small white beans and black beans.  This time I wanted to have some beans for a salad, so I cooked a pound of red beans.  I sorted through them for rocks – none this time – and rinsed them off.  The package said to use 8 cups of water, so that’s what I did, and I added a teaspoon of garlic salt.  I brought them to a boil, and then turned the heat down to simmer.  I tested them after an hour, and they were almost done.  I let them cook for another 1/2 hour, and they were perfect.  I drained and rinsed them, and they were ready for the salad.  I can’t believe that I soaked beans all my life when I didn’t need to.  All that extra time and effort for nothing.  I will never soak beans again!
