Cantaloupe and Cucumber Salad with Ginger Mint Dressing

I saw this salad on Keep It Up, David! one of my favorite blogs, and I just had to make it!  I was already going to my favorite fruit stand, so I added the ingredients for this salad to my list.  I got a regular cantaloupe instead of the Hami Melon, a couple of yellow summer squash, a couple of zucchini, and a couple of cucumbers.  On the way out we passed the blueberries, so since I love blueberries, I grabbed a box of them, too.

The night before we had a delicious watermelon salad at Concetta that had feta cheese and red onions in it, and Al wanted that in this salad, so we went to the grocery store and bought those, too, and some mint.  I already had a piece of ginger sitting in my fridge that I really needed to use in something.  I used lime juice instead of the lime – just being lazy.

This is absolutely delicious!  The dressing is fabulous, and the blend of fruit and veggies is just perfect.  Al even ate TWO bowls of this!!!  I will definitely be making this again.

Cantaloupe and Cucumber Salad with Ginger Mint Dressing

Salad:
1 cantaloupe, peeled and cut into bite-sized pieces
2 cucumbers, thinly sliced
2 zucchini, thinly sliced
2 yellow summer squash, thinly sliced
1 red onion, thinly sliced
8 oz feta cheese, chopped
1 box blueberries

Dressing:
1 bunch mint, chopped
1 3 inch piece fresh ginger, finely chopped
1/4 c lime juice
2 T honey

Mix dressing ingredients together in a small bowl.  Add to salad ingredients in a large bowl, and mix together.  Refrigerate for a few hours to blend flavors.
