Fresh Blueberry Snack Cake

I love summer – I love the hot weather and I love all the fresh fruits and vegetables that are available.  I love to eat fresh fruit just plain for dessert – just wash it and eat it.  But Al says that “Fruit isn’t dessert!”  So when he eats some fresh fruit, he still feels like he needs something for dessert.  So I’ve been experimenting with this cake recipe to try to make it as healthy as possible, while still passing Al’s “Dessert Test.”  So far, Al loves it, even when I don’t put frosting on it – the cake below has a dab of non-fat plain greek yogurt for a topping, which really tasted great, I love the tart yogurt and the sweet blueberries.  Al ate his plain, liked it enough to eat his share, and was as happy as he gets without frosting – lol.  I’m going to try this cake again with different fruit, maybe cherries or blackberries.

Fresh Blueberry Snack Cake

1 1/2 c flour
1/2 c white whole wheat flour
1 c sugar
3 t baking powder
1 t baking soda
1 t salt
1 egg
1 1/2 to 1 3/4 c buttermilk (see below)
1 t vanilla
1 box fresh blueberries

Pre-heat oven to 350 degrees.  Blend together dry ingredients in a large bowl.  Break egg into a 2 c measuring cup and beat with a fork until lemony yellow, and blended.  Add buttermilk to measure 1 7/8 c total, add vanilla, and stir to mix.  Add buttermilk mixture to dry ingredients and stir thoroughly to mix, about 2 minutes.  Scrape dough into a 13 x 9 inch cake pan that has been coated with non-stick cooking spray.  Sprinkle blueberries evenly on the top.  Bake in 350 degree oven for 30 to 35 minutes, or until done.
