Curried Sweet Potato Salad

I wish that I could remember where I found this recipe.  I have had it for a couple of years, and I kept thinking that I should try it, and I finally did.  This recipe doesn’t make very much, but it is very rich, almost a dessert instead of a salad.  Al especially likes the cashews, I will have to hide them if I want any left for the salad – LOL.

Curried Sweet Potato Salad

1 lb sweet potatoes, diced
1 6 oz carton non-fat plain greek yogurt
2 T mango chutney
1 t curry powder
1/4 C raisins
1/4 C green onions, sliced thin including tops
1/3 C roasted cashews

Roast sweet potatoes in a 425 degree oven for 3o minutes, turning once or twice.  Stir together remaining ingredients except cashews in a large bowl.  Add still warm potatoes to dressing and mix together gently.  Chill overnight.  Garnish with cashews.
