Mexican Style Pasta Sauce

This recipe was in our local newspaper a couple of months ago, and I finally got around to trying it.  I love pasta, and I love Mexican food, and this was delicious!  Naturally, I did have to make a few adjustments for our tastes – like add more veggies LOL.  It makes a Huge amount, and even though Al loved it at first, he got tired of eating this after a while.  Next time I will freeze half of it, I love having ready-to-eat meals in the freezer.

Rotini with Mexican Style Pasta Sauce

1 lb ground turkey
1 lb hot chorizo sausage
1 T crushed garlic
1 onion, diced
4 celery stalks, diced
1 bell pepper, diced
4 jalapenos , chopped with seeds in
2 c corn
1 28 oz can chopped tomatoes
1 29 oz can tomato sauce
2 T tomato paste
2 T chili powder
1 t oregano
1/2 t thyme
1/2 t cumin
1/2 C chopped fresh cilantro

In a large pot, crumble and saute ground turkey meat and chorizo until cooked.  Add garlic, onion, celery, bell pepper, and jalapenos and cook for about 10 minutes until vegetables begin to soften.  Add remaining ingredients except cilantro, stir to mix thoroughly, and cook over low heat for about 1 hour, stirring occasionally.  Remove from heat, stir in cilantro, and serve over cooked pasta.
