Chicken and Peach Chipotle Roll-Ups

I found this recipe in the local newspaper 8 or 9 years ago in an article about a woman who had entered the Pillsbury Baking contest and had not only lost, but had come in Last Place!  The reporter thought that she was cheated out of a win because this wasn’t a dessert.  He thought that she should have won because this was a really delicious main dish, and after I tried it, I had to agree.  Over the years I’ve made some (small) alterations to the original recipe to reflect our tastes and now I think that this is my number one Favorite of All Time.  The flavors are just perfect together and the chipotle chilies have a great taste and give it the perfect kick.

Chicken and Peach Chipotle Roll-Ups

1 lb cooked chicken, diced
1 red bell pepper, diced
1 bunch green onions, thinly sliced including tops
1 – 4 (to taste) chipotle chilies in adobo sauce, chopped
1 C salsa (I use medium hotness)
1/4 C raisins
1 16 oz bag sliced frozen peaches, cut in 1″ pieces
1 t cumin
1 t coriander
1 t cinnamon
1 t oregano
1 pkg burrito size tortillas
non-fat sour cream
fresh cilantro

In a large frying pan or wok sprayed with non-stick cooking spray, cook all ingredients except tortillas, sour cream and cilantro until thoroughly heated.  Nuke a tortilla in the microwave for 15 seconds, spoon chicken mixture on, garnish with sour cream and cilantro, roll up, and eat!  Yummers!!
