Christmas Soup in the Crock Pot

This soup is so easy (except for peeling the potatoes – LOL) and it tastes so good – at least it tastes good if  you like potatoes, I love potatoes.  And the red wine vinegar really makes it!  Bad news is that Al has informed me that he doesn’t like this any more.  The sausage is bland and the potatoes are soft (?!)  He just won’t eat it anymore.  Good news is I have an entire crock pot of soup to eat all by myself.

Christmas Soup - Red and Green and White - Delicious

1 pound kielbasa, sliced 1/4-inch thick on bias
8 cloves garlic, minced
1 pound red kidney beans, soaked at least 4 hours and up to overnight
2 quarts chicken broth(enough to cover)
5 pounds potatoes, peeled and cut into 1/2-inch cubes
1 teaspoon salt or to taste
One package baby spinach
1/2 cup red wine vinegar
1/2 teaspoon freshly ground black pepper

Place first 5 ingredients in crock pot and cook for 8 to 10 hours.  Add the spinach to the pot, cover and cook for an additional 10 minutes or just until it is just wilted, but not mushy.  Add the red wine vinegar and black pepper and stir to combine.
