Pear Salad with Cilantro Dressing

I love salads.  I love all the summer salads with the fresh vegetables and fruit that is available then.  But when summer’s over I really look forward to the fall and winter salads that I’ve ignored all summer long.  This is my favorite fall salad, I love pears and cilantro and together they are unbeatable.

Ideally, the carrots should be cut in match sticks, but I didn’t have the time for that.  I sliced them really thin with a mandolin, but Al thinks that this is just too much carrot at a time.  He picked most of them out of his salad.  Also this time instead of English Walnuts, he got Black Walnuts.  I normally don’t like them very much, but they actually taste pretty good in this salad.  I guess just about anything tastes good with cilantro on it – LOL.  I serve this on baby spinach, but you could use any kind of leafy green that you like.  Al just eats it plain.

Pear and Carrot Salad with Cilantro Dressing

1 Pear, cored and cut up
1/2 bunch of fresh cilantro
2 tbsp. lemon juice
pinch of salt
fresh ground black pepper

Blend all ingredients in a blender until liquified.  It blends easier if you put the pear in first.

2 Pears, quartered and sliced
2 Carrots, cut into match sticks
4 oz. Feta cheese, chopped
1/3 cup walnuts,chopped
Baby Spinach or Mixed greens
