I LOVE Pizza!! I love any kind of pizza. If I were stranded on a desert island and could have only one kind of food for the rest of my life, I would choose pizza. (Especially instead of dry dog food which is what I would have to choose IRL since it has the complete nutrition that I would need to stay healthy until I was rescued – YUCK!)
This pizza has everything that I love – butternut squash, gorgonzola cheese, garlic – and the combination is fabulous! And I had fresh thyme from my herb garden – win! I will make this again, and soon.
1/2 of a butternut squash, de-seeded, peeled, and cut into 1/2 inch cubes
Salt and pepper to taste
1 onion, diced
1 raw pizza crust, I use the “skin” from Papa Murphy’s
1 or 2 t crushed garlic
1 cup mozzarella cheese, shredded
1/4 cup gorgonzola cheese, crumbled
2 T fresh thyme, chopped
Coat a baking pan with non-stick spray and add squash. Sprinkle with salt and pepper to taste. Roast the squash in a preheated 350 degree oven for 40 minutes, turning every 5 or 6 minutes. Set aside. Meanwhile, spray a large skillet with non-stick spray. Add onions, and cook until they start to get soft and are brown around the edges.
Increase oven temperature to 425. Spread 1 or 2 teaspoons (to taste) crushed garlic evenly on pizza crust. Layer evenly with squash, onions, and both cheeses. Bake for 20 minutes. Top with fresh thyme. Al also adds crushed red chilies.
