Bell Pepper and Apricot Slaw with creamy Ginger Dressing

I’m always on the lookout for good recipies, especially salads, and when I saw this one in the newspaper, I really wanted to try it.  I modified it some, of course – I almost always have to tweak a recipe for our (my) taste.  And this one turned out wonderfully!  The combination of dried apricots and the ginger dressing makes this one a real keeper.

Bell Pepper and Dried Apricot Slaw with Creamy Ginger Dressing

 

  • Salad:
    1 red bell pepper
    1 green bell pepper
    1 red onion
    1/2 small red cabbage
    12 – 15 dried apricots
    baby spinach
  • Dressing:
    2 T  rice vinegar
    1 T soy sauce
    1/4 C apricot nectar
    1 clove garlic, minced
    1 1/2 inch fresh ginger, chopped fine
    1 T cilantro, minced
    1 6 oz carton plain non-fat greek yogurt

Cut bell peppers and apricots into strips, slice onion, and shred cabbage.  Mix together in a large bowl.  Mix dressing ingredients together in a small bowl, and add to salad.  Toss to mix, and refrigerate for several hours.  Serve on baby spinach.
